The Maize Blaze Story

Maize Blaze was launched in Camden Market in March, 2014 by founder Ruth Christianson. Inspired by her early childhood growing up in Bogota, Colombia, Ruth always wanted to be able to share the flavours of home with her fellow Londoners.

 

Life revolved around food for her Colombian family and for Ruth, this passion later translated across into work as she trained in London - working at Coq D'Argent, The Orrery, Cantina Del Ponte and Pont de La Tour whilst also completing a Le Cordon Bleu Patisserie Diploma.​

 

Ruth was drawn to Camden Market, a place familiar to her from her years as a teenager in London, due to its pioneering street food market and support for new businesses. 

Learning the ropes quickly, Ruth developed her food and experience in the heart of London’s dynamic street food scene, and Maize Blaze quickly set the standard for modern contemporary Colombian cuisine in London

 

Ruth’s commitment to not only the quality of her food, the service she and her staff provide but also the commitment the business shows to sustainability, local producers and suppliers and supporting charities both in the U.K. and in Colombia shines through every meal.​
