service, incorporating an ethical approach to our packaging and ingredients, while creating new and exciting recipes to tempt both regulars and newcomers. Colombia has a wonderfully rich and diverse food culture to draw upon, with unique and tantalising flavours keeping us inspired every day of our journey.

       How we got started

Ruth Christianson, founder of Maize Blaze, grew up in Bogota, Colombia, from the age of two to the age of eight. In these years her brain soaked up the love of corn, coriander, cassava and all the wonderful tropical flavours you can find in Latin America.

The Colombian side of her family revolved their lives around food and this passion was later translated as she trained in London - working at Coq D'Argent, The Orrery, Cantina Del Ponte and Pont de La Tour whilst also completing a Le Cordon Bleu Patisserie Diploma.

She eventually founded Maize Blaze in March 2014 with a menu of fusion empanadas at Camden Market, a location familiar to her from her teenage years.
